I've made this for years but wanted to try something different. I made the recipe as listed, but instead of adding the heavy cream to the chicken at the end, I added it to the chicken after cooking it. It came out fine, but I'm wondering if it would've been better using the cream before cooking the chicken. I could taste the cream in the crust, but I just wondered if it would've been better without it, or if I should've added the cream after cooking the chicken?
I made this for company. It was fabulous! My guest gave me her recipe for chicken pot pie as it was amazing so I knew I had to make it. I used a gluten-free crust and substituted the chicken with a mix of lean ground turkey and ground pork. For the liquid I used some chicken broth and heavy cream, and stirred the liquid before adding to the crust. I also doubled the sugar (no cornstarch). It was the best pie I've ever had! We loved this! My brother-in-law requested a recipe for chicken pot pie, and I've been wanting to make one for months, but it's never quite turned out the way I've wanted it. This was absolutely wonderful! The meat was moist and tender, the bottom crust was flaky and delicious, and the top crust held a great, flaky crunch! Next time I'll probably add a bit more potato, and make sure to use some cornstarch for thickening. I'm also going to try to be super vigilant about adding salt, because the chicken breasts were surprisingly bland. I'm so excited to be able to make this again for the holidays!
I used the flour substitute, so I did not measure exactly, but I did add an extra 1/2 cup of chicken broth. I followed the recipe exactly, and used a homemade gluten free crust, because I didn't want to mess with the pre-made one. I added 1/2 extra potato, and 1/2 extra carrot. I also took out about half of the sugar, and used a little less cornstarch. My pie was very thin and not completely cooked, so I ended up sticking it in the oven for an extra 15 minutes. It turned out good, and I did like the flavor! I will be making it again!
